Our very own Lion Jack Edwards will be teaching his annual Jammin’ With Jack Class at the Albiani Recreation Center. This class fills up quickly, use this link to register before it is too late.

Lion Jack has been making jams on and off for 60+ years, learning at his mother’s side as a child.  He is all about using safe, modern canning methods following the USDA & National Center for Home Food Preservation guidelines.  This will be a basic jam class using water bath or steam bath processing. As for the type of fruit that will be used in this class, it may depend upon what is available in the farmer’s market at this time of year, although Lion Jack will talk about putting aside fruit puree so that you can make your favorite jam, any time of the year.

You may ask, what kind of jams, jellies, marmalades, sauces and preserves does Lion Jack make?  If you checked his jam pantry today, here is what you would find: Apple Butter, Apricot, Asian Pear Butter, Blueberry, Blueberry Butter, Boysenberry, Carrot Cake, Cherry, Cherry Plum, Chinese 5-Spice Plum Sauce, Cranberry Cocktail, Creamsicle, Fig, Fig with Red Wine & Rosemary, Jalapeno, Kumquat Chutney, Kumquat Marmalade, Lemonade, Limeade, Mandarin Marmalade, Mango, Mulberry, Nectarine, Orange Marmalade, Peach, Peach Butter, Pear, Pear Butter, Persimmon, Pineapple, Plum, Pluot, Pomegranate, Pumpkin Spice, Raspberry, Red Pepper, Roasted Peach & Habanero, Ruby Grapefruit Marmalade, Spiced Pear, Spiced Nectarine, and of course, Strawberry.
